Organoleptic description: The coffee has a strong and complex flavor with an aftertaste of burnt sugar (caramel) and chocolaty hints.
The most exclusive Coffee in the world, it comes from the Indonesian islands of Sumatra, Java and Sulawesi and only a few dozen kilos a year are produced. Its exclusivity is connected with a particular mammal, which in Indonesian is called Luwak (the palm civet), which likes to climb the coffee trees and eat the ripest fruits.
The civet eats the red coffee cherries, that when swallowed are digested in the animal’s stomach and its gastric juices , which are rich in sugary enzymes, naturally toast the beans. Once expelled, the beans are collected and sold as an authentic delicacy. And to think that initially the plantation owners considered this animal a threat to their profits!
