BRASIL4Organoleptic description :  An extremely balanced coffee, of medium body and with an elegant sweetness, it features a soft density with a strong aftertaste of cocoa and a vague hint of prune, which is the result of the particular and unique micro-environment in which this exceptional coffee grows.

On the slopes of the Serra do Pau d’Alho, in the vicinity of the Cabo Verde River, lays one of the oldest coffee-growing regions of Brazil. At an altitude between 1,000 and 1,200 meters, a small group of producers descended from the first fazendeiros, cultivate one of the sweetest Arabica quality coffees from this country.

Around 60% of the plants are from the traditional Mundo Novo variety and about 30% Catuai, while the remainder is Bourbon and other cultivars. The Pergamino is a selection originating from the first harvest, carried out in May, and from the main harvest which usually takes place between June and July.

Only the ripe drupes are selected and peeled, after which the beans – still covered in slime of the pulp – are placed to dry in the sun for three days, thus permitting assimilation of the sugary substances.

Using this system, only about 25% of the harvest is carefully selected to become our Pergamino. Before shipping, the coffee undergoes a further cleaning, after which it is tasted to check the quality level.

Only the batches that pass this last exam are finally labeled and shipped.
