sweet, robust, and slightly more acid than the traditional coffee. The Jacu Bird coffee produces a pleasantly mild cup. The dry fragrance is characterized by a delicate hazelnut flavor, while the aromatic compounds contain hints of lemon balm with a slightly spicy aftertaste.

The Camocim Estate, situated in Pedra Azul, Espirito Santo, Brazil, produces a special quality of coffee, using a South American bird, the Jacu. These indigenous birds are herbivores that live in the forest plantations (areas planted with coffee shrubs under the shade of taller trees) and they feed on the ripe coffee cherries.

This is a natural process of selection for quality coffee. When the Jacu bird swallows the cherries, it eliminates the digested beans, which are then found on the ground underneath the coffee trees.

This odorless excrement is collected and transported to the drying areas, where the beans are dried, cleaned and preserved in their parchment skin, or PERGAMINO for a maximum of three months. It is important to notice that the bean is expelled in its PERGAMINO form and not as a green bean.

It is one of the rarest coffees in the world.
